NEC has introduced a fully touch screen IP telephone.  Nortel introduced a touch screen monochromatic M3000 digital set version around 1990, but it never caught on.   This NEC set does support SIP, but whether it works on open sourced SIP is yet to be discovered.

This is a photo of one of their stores telephones.  This constantly redesigned  model of the Toshiba DK Strata digital telephone, was originally released around 1990.
